Has been with Café Central since 1999. He started out as a sous chef and has worked his way up to Executive Chef. His number one priority is searching out and getting the freshest quality ingredients.
He continuously tries to maintain the restaurant’s quality by staying up with the new trends, ingredients and cooking techniques. And as It is equally important to not get too comfortable with routines so we can keep guests wondering what we’ll do next.
Chef Pomales has been nominated twice for the James Beard Foundation for Best Chef of the Southwest, but still is humble enough to say that El Paso is his home and is here to stay.
